The “Athesis” Brut Rosé by Kettmeir winery is the “brother” and the Rosé version of their flagship wine “Athesis” Brut. The “Athesis” Brut Rosé is a blend of 50% Chardonnay and 50% Pinot Noir, with short contact with the skins to avoid any extraction of tannins and bitter notes.
The Pinot Noir grapes are vinified as a rosè wine, with short maceration on the skins and subsequent soft pressing. The Chardonnay grapes, which come from north-west facing vineyards, are soft pressed as well to gently extract the free-run juice. The two varieties are fermented separately at a controlled temperature of around 15 – 16 °C. Secondary fermentation takes place in the bottle at a cellar temperature of 11 – 12 °C; the wine then ages on its lees for an average of 24 months before being disgorged.
The “Athesis” Brut Rosé is a Traditional Method sparkling wine in which you can easily perceive the high percentage of Pinot Noir: flint, iodine, fresh redcurrant and pink pepper notes dominate both the nose and the palate of this wine. The base wine does not undergo malolactic fermentation and it only ages in stainless steel tanks, preserving the grapes character and primary aromas. The aromatic profile is complemented with hints of bitter citrus like orange zest, cedar and grapefruit.
The high acidity and the citrus-stoney character of the “Athesis” Brut Rosé create a wine that is smoother and more complex after some years of aging in the bottle, allowing the wine to display its orange fruit character together with the bitter citrus notes and the flinty background. In fact, the wine develops notes of ripe peach, papaya, red orange and sweet lemon cream.
An intriguing aperitif wine that also matches with seafood, especially sashimi salmon, prawns and shrimps.
The wine also works perfectly with soft cheeses like Brie or Mozzarella seasoned with basil and oregano.
Nonetheless, the “Athesis” Brut Rosé is the ideal companion for a Chinese cuisine dinner, especially with spicy hot pot recipes.
