Wine description


The “Athesis” Brut by Kettmeir winery perfectly embodies the perfumes and the character of the Dolomites that top the vineyards from which this Traditional Method sparkling wine is produced. “Athesis” is the latin name for the river Adige that runs through the region; the Adige valley is the home of most of the grapes grown in Alto Adige, thanks to the steep slopes and the various aspects of the vineyards. Alto Adige region is featured by high diurnal range, with high temperatures during the day followed by a drop up to 20°C during the night. This climate is perfectly suited to grow Traditional Method grapes that maintain the acidity while reaching their aromatic ripeness.

The “Athesis” Brut is a blend of Pinot Blanc, Chardonnay and a small percentage of Pinot Noir, being always a vintage wine.

These three grape varieties are soft-pressed and fermented separately at a controlled temperature of 14 – 16 °C. The wine matures on the lees after the first fermentation in stainless steel tanks without undergoing malolactic fermentation. Liqueur de tirage is added to the cuvée and the wine is then bottled and sealed with crown caps before being placed in the cellar at 10 – 12 °C for secondary fermentation in the bottle. The wine rests on its lees for an average of 24 months.


The Aging Potential


The “Athesis” Brut is a Traditional Method wine with great consistency and extremely long aging potential because of its sharp high acidity and richness in fruity aromas. In fact, the wine is not too bold or yeasty when released on the market and it perfectly maintains the fruitiness while aging in the bottle after the disgorgement. The choice to avoid malolactic fermentation also helps the wine to maintain its character, while increasing its complexity thanks to the tertiary aromas developing in the bottle like whipped cream, caramel, toasted nuts and sweet spices.

The “Athesis” Brut maintains its aromatic profile for really long time, displaying some tertiary notes only after 8/10 years of aging in the bottle.

Pairings


The aromatic profile of the “Athesis” Brut gives us an example of the complexity the citrus aromas can offer: lemon zest, lemon juice, tangerine leaves, cedar and sweet grapefruit perfectly come across the delicate yeasty notes and the fine herbs notes.

The texture is sharp, thanks to the high acidity, and it enhances the citrus notes on the palate; this profile makes the wine perfectly suited for a wide range of pairings, from being an aperitif to be matched with spicy chicken and poultry recipes.
